Every Day Brings a New Surprise!
Don't you just love surprises? I surely do! Especially when they come out of nowhere from someone I love and think of real often. Special friends are some of my greatest blessings, and hearing from them unexpectedly makes them even more special!
Just a few minutes ago my good friend Glenda Harrell called me on her way home from work in Kentwood. Glenda used to live in Kentwood but now lives just across the state line in Mississippi. She was passing by the home formerly owned by Bill and Donna Quin, and this made her think of me. I worked for Bill Quin in his law office for 16 years, and admittedly, I think I sometimes practice law without a license! Please don't tell the bar association. Sadly, he and Donna are both now deceased, but their influence lives on. Deep friendships were also formed while I was working there and I will always cherish those years.
But back to Glenda: Glenda and I always have fun sharing memories, catching up on our kids, and talking about the next time we can get together for a good, strong cup of Louisiana coffee! I'm happy to report that if everything works out, we can seize that opportunity in just a few days when we "touch down" briefly in Kentwood! Thanks, Glenda, for the call and for your enduring friendship.
I will never forget when I first started working, Andy was in kindergarten, or maybe first grade, and Glenda would babysit him a few hours until I got off work. One day he had an accident on his bike, falling over the handlebars, and really damaged a front tooth. "Miss" Glenda was there to soothe and give him hugs as only she can do! Somehow, that tooth was saved, probably due to her quick thinking. That's only one memory out of a gazillion that connect us to Miss Glenda!
Another thing about Glenda is that she is undoubtedly one of THE BEST cooks anywhere! She can also whip up a huge gourmet meal as fast as you can blink your eye! She is the only woman alive who can put together an entire Christmas or Thanksgiving Dinner in no time! I would be slaving over turkey and dressing and all the trimmings for 2 or 3 days and then Glenda would wake up Christmas morning, do that yummy dressing and a million other things and have it all ready for her family in time for lunch or early dinner! She is amazing, and speaking of her cooking, this entry would not be complete without mentioning her outstanding fried chicken. Although most of us don't fry chicken at home too much anymore (just because KFC is usually just around the corner and also because "they" said it wasn't good for us! What do "they" know, anyway, about what's good and what's not!) Here goes another memory: many years ago we invited some friends over for dinner and I fried some chicken. The friends had a young son, 5 or 6 years old as I remember, and upon seeing the home fried chicken, remarked: "I didn't know you could fry it at home!" I'm sure the mother turned several shades of red!
Here goes with Miss Glenda's fried chicken recipe. She says it's nothing special, but I beg to differ. Maybe it was the love that went into it, along with that well-seasoned black iron skillet!
GLENDA'S FRIED CHICKEN
1 cut-up chicken
Salt and pepper the chicken pieces, to taste
If possible, soak the chicken in buttermilk overnight, or at least 30 minutes. Use enough flour to have plenty to coat the chicken in. To each cup of flour, use approximately 1 tsp. EACH pepper, garlic powder, and paprika. Blend well.
Heat enough oil in skillet to measure 2 or 3 inches (iron skillet works best!) until real hot. You want enough to cover the chicken real well. Dredge chicken in flour mixture until chicken is coated real well and fry until well-browned. Turn chicken and brown the other side. Make sure juices run clear. Lower fire, if necessary, to keep chicken from burning. Drain, if you prefer, on paper towels. Serve immediately!
There you have it! Sounds simple enough, huh? Miss Glenda never did tell me how much LOVE went into the chicken, but I suspect it was a TON! Here's a photo of Glenda and her three gorgeous chidlren made in the Fall of 2006. Left to right are Rhonda, Scott, Glenda, and Michelle. We won't get into the grandchildren this time! Now, that would take a long time! They are as special as they come!
